Easy Huevos Rancheros

Home-cooked Mexican is always a delicious and affordable meal option.  
It can also be quick and easy to prepare which makes it a great choice for busy days. 

So Here's my version of Easy Huevos Rancheros:

  • Crunchy Taco Shells. 
  • 1 Can of Diced tomatoes. 
  • 1 Can of Refried Beans.
  • 1 or 2 avocados
  • Fresco Queso
  • Eggs
  • Minced garlic

  • Step 1: Heat the oven to 250 degrees, break your shells in half, and place them on a cookie sheet.  Heat them for about 10 minutes.
  • Step 2:  Drain the Can of diced tomatoes and place in a pan, add two Tbsp of minced garlic, mix & heat for about 5 minutes.
  • Step 3: Heat your refried beans in a bowl in the microwave 2 minutes.
  • Step 4: Fry your eggs however your prefer.
Finally assemble your Huevos Rancheros!  First the tortilla shells, then the tomatoes, then the beans, then your egg, sprinkle with the cheese, and finish with avocado slices.

It was delicious and so easy to make!

Even the little ones ate it!
